And it's true, different Middle Eastern restaurants can prepare the same dish quite differently. Sometimes it's because the owners are from different parts of the Middle East -- Lebanese and Syrian foods, for example, can have a lot of the same-sounding names but different methods of preparation and/or seasonings. We used to have a whole section in one part of town that had about a dozen Middle Eastern restaurants (back in the 70s and early 80s). Now they are all gone except for one, maybe two, of them. I still can't figure out why they closed, as they were all extremely popular. I guess everything goes in phases. That's one I hope will come back again! :-D ~Jo
