Blend it into a raw soup (with raw zucchini, spinach, tomato, red bell pepper, onion or scallions, garlic, etc.)

Mash it into guacamole (with garlic, onion, lemon juice, salt, and cayenne) and spread it on romaine leaves instead of crackers.

Slice or dice it and serve it over a salad.

Cut it in half, remove the pit, drizzle each half with balsamic vinegar, and eat with a spoon.

Dice it and serve it on top of polenta or rice or with steamed veggies.
