Here are some (healthy) foods that are higher in calories and fat that he could add to his diet:

avocado
granola
nuts and seeds (trail mix, nut butters, tahini)
pasta and bread (easy digested carbs)
oils (olive, flax, etc. can be easily added to veggies and pasta to boost calories)
soymilk, nutmilk, or hempmilk
smoothies

I think that "Becoming Vegan" has a chapter for those who are underweight.

Also Brendan Brazier has a book out that consists of vegan recipes made with nutrient dense
whole foods. (He's a triathlete, so if anyone needs extra calories, he does!)
