Subject: Cultured Whole Wheat Flour
Date: November 4, 2006 at 1:18 pm PST
Earlier this year, I saw a post saying a number of you were wondering - what is cultured wheat flour? I just Emailed Rudi's Organic Bakery with the same question, I wanted some of their burger buns. And, I received an answer! "Cultured whole wheat flour is created by combining whole wheat flour and distilled vinegar and then dehydrating this mixture back to flour form. This process is proprietary, but the only ingredients are whole wheat flour, distilled vinegar and water." "Our organic breads are free of harmful pesticides, artificial ingredients or preservatives and trans fat resulting in breads that are not only great tasting, but safe, healthy and wholesome"
