Greeting: Going Vegan

I've been a vegetarian off and on for over a decade, and I'd like very much to go vegan. Unfortunately, I've never been able to eliminate meat/animal products for more than 6 weeks because I become weak, shaky, and very hungry after that. Vegetable protein sources don't make the symptoms go away. As a celiac, I must avoid wheat, rye, barley, and gluten/seitan, as well as all products that contain them. If any of you can share your success in making the transition from a consumer of animal products to vegan, I'd be most appreciative. Thank you. By the way, I'll be 67 in a couple of weeks.
