Hey, thanks, PamM. I pretty much mix it up. I find I get way too hungry if I just do veggies (even the starchy ones). So I usually have some rice or pasta or beans with my veggies. For breakfast I aways have oatmeal with ground flax, walnuts, some kind of fruit and soymilk. And I cook a lot, so I'll always have something in the freezer to heat up for those times I'm too tired (or hungry) to cook. I love the recipes at fatfreevegan.com (I hope that's okay to post here).
I do walk a lot as well - at least an hour in the morning and another 45 minutes or so in the afternoon. (But it's not the out of breath kind of walking, it's more the meditating on life kind....)
