Subject:         sugar-free muffins

Banana Muffins

1 cup wheat flour
1 cup corn flour (not cornstarch)
2 & 1/4 tsps baking powder
1/4 tsp salt
1/4 cup oil or applesauce
Ener-G Egg Substitute for 1 egg, prepared
Soymilk or rice milk
1 very ripe banana, mashed

In a large bowl, mix dry ingredients.
Mix in oil and Ener-G.
Stir in 'milk gradually until you get a thick,
cake-batter-type mixture (not too wet or too dry).
Pour into well-sprayed muffin tins, filling 3/4
full.
Bake at 350 F until a toothpick inserted into
center of a muffin
comes out dry (15 - 20 minutes or thereabouts).


NOTE: If desired, add 1/2 cup golden raisins.
