In 2007, Joy (omer.ayfer.net) was searching for a recipe for marmalade made without sugar. If she still needs it, here's a recipe we found for honey-orange marmalade.

Found it in Stocking Up, from the editors of Organic Gardening, Rodale Press, 1977.

3 med size oranges
1 cup water
1-3/4 cups honey
6 tablespoons lemon juice
1/4 cup liquid pectin

Run oranges thru food chopper, using the fine knife. Measure to make sure that you have at least 1-3/4 cups of ground orange. Add water. Bring to a boil and simmer 15 min. Add honey and simmer 30 min. Add lemon juice, then liquid pectin. Bring to a full, rolling boil, and boil 30 seconds. Remove from heat. Skim and stir for 5 minutes. Pour quickly into sterilized glasses, then paraffin.
