Subject:         Amazing decadence . . .

I am amazed at how decadent a no-sugar dessert can be. I have been drastically reducing sugar in my diet, only using fruit, and discovering xylitol but only using it occasionally. Tonight I had a craving for dessert so I made a peach-blueberry cobbler with 2 tablespoons of xylitol in the filling, and 1 tablespoon of rice syrup in the topping. It was still too sweet! Maybe because the peaches were very good organic peaches, I really think I could make this without the rice syrup and xylitol at all and it would still taste great. I felt like I was eating something full of sugar but because I made it I knew it wasn't!

It's amazing how much more sensitive your tastes are when you eliminate sweets, same for salt and fat. I think most people are just so desensitized they don't even realize it.
