Subject:         Stevia cookies turn furry and green (moldy)

I bake a firm coffee-dunking cookie that has a shelf life of 8 months or more. I altered this recipe, using stevia, for a diabetic friend. The cookies taste great! They are only slightly sweet which my friend appreciates. Problem is that these cookies turn green and furry in less than a month. Looks like a mold. Anyone ever seen this problem? Know how to fix it?

I have never used a preservative but would consider it if I knew anything about them.
