I finally bought some Xylitol and made some lemon biscotti with it. The ratio to sugar is 1 to 1, so the recipe called for 3/4 c. sugar so I used 1/2 c. Xylitol. WEll, since I haven't been able to eat sweets and/or sugars for awhile now, it was still too sweet, but the cookies still came out very very good. Now I am happy, I can bake with a healthy sugar alternative! Everything I have read about Xylitol is positive. Just wondering how others feel about it and if they use it too?
