I agree with everything Molly said. In one of Dr. Neal Barnard's books he said that cheese contains an addictive substance, like morphine, to make the calves want to keep drinking it. This is what makes us want to keep eating cheese, but if you can go for about three weeks without cheese you may overcome the addiction. I never crave cheese anymore and I'm so incredibly happy to have given up the one thing that was keeping me from going vegan.

For pizzas, I make tofu ricotta (the cookbook "Vegan with a Vengeance" has a great recipe) and top the sauced crust with dollops of it. To me it's similar to authentic Italian pizza. I've also used many Joanne Stepaniak faux cheese recipes, which have turned out very good.

This is just food for thought. While you're mulling it over...if you have a Trader Joe's nearby they have a list of cheeses that don't use animal rennet and I think most Cabot-brand cheeses are okay.
