Just a thought, but if you are vegetarian for ethical reasons i.e. for animals, you might want to do some reading on dairy cows. They are, unmistakably, the most miserable beings on the planet. And the dairy industry is inextricably linked to the veal industry. In order to take milk from am a mother cow, the calf must be done away with, either females raised as dairy cows, or males treated as veal, a notoriously cruel practice. Cheese seems to be an addiction of sorts. You know the dairy industry line that goes "Oh the power of cheese?" I think it's true. Most of us vegans used to love cheese, but over time many of us have come to a place where we no longer crave or even want cheese. I know it's hard to believe, but it's true! I used to eat a slice or two in the afternoons with corn chips, now I eat something else -- an apple, "crock cheese" on crackers, hummus with pita bread, whatever. There are dozens of other things to eat. I don't even buy the Follow Your Heart cheeze much, even though it works pretty good as a sub on recipes. I have simply learned to cook and live without it, and honestly don't miss it. It took a couple of months. Instead of cheese on sandwiches, if I want that "fatty" mouth-feel, I use avocado. I have learned to make yummy pizza with all homemade ingredients, using a drizzle of olive oil for that mouth-feel -- and I prefer it to the fatty cheese-covered pizza in commercial restaurants. I think there are certain things that are at least psychologically addicting, and your tastes can and do change. They are salt, fat, and sugar, and it's amazing what can happen when you put the effort into changing. You might also check out making your own cheese, Jo Stepaniak has some books on replacing cheese, and I have found many recipes that I like and use frequently.
