Congratulations.
There is no better lifestyle choice, for your health and for the environment, and of course for our co-inhabitors on this planet--the animals than going vegan.
Thyroxin is the hormone produced by the thyroid gland that regulates metabolism. Hypothyroidism is a condiiton whereby the hormone produced is insufficient.
Regarding including soyfoods in your diet:
Soy, as part of a healthy diet will not cause hypothyroidism and shouldn't cause undue problems for you. It is recommended that you take your medication at a different time of day, when consuming soyfoods.
That being said, a healthful vegan diet needn't contain a lot of soy products. A balanced menu with sufficient calories, built on vegetables, legumes, grains, and fruit will contain all of the nutrients necessary to sustain health.
I encourage you to move toward a healthful plant-based diet and include a wide variety of delicious foods. There are terrific veggie burgers that are soy-free. A fav of mine, SUNSHINE Burgers are in Whole Foods and lots of health food stores. They are tasty and made wirh brown rice, sunflower seeds, and other natural ingredients. www.sunshineburgers.com.
Include fresh, jarred, and frozen foods with the veggie burgers, tofu, and Tofurky. Try lentils, red-green & brown, garbonzo beans, brown rice, greens, kale, fresh spinach,artichokes, mangoes, crisp apples, etc.
I'd go on but I am making myself hungry......yumm.
