I have not had this experience. It thickens and is not sour? A few questions: What kind of containers? Covered? What beans are you using? Are they soybeans or something else. And finally, when you say "cool a bit," is the milk still warm when you cover it? I cool my soymilk completely in the SoyQuick transfer container with the strainer on top (fits right in.) Cooled to room temperature, BEFORE it is covered with a lid, and refrigerated. Previously I used the permanent coffee filter to cover until cooled, It is possible that the heat would promote the growth of bacteria, which would thicken the milk, prematurely.
