Tofutti brand has slices of soy cheese that imitate american and mozarella (and used to hve a wonderful garlic flavered one) that are free of cassein. I don't know about carcinogens but am sensitive to cassein an try to avoid it. This "cheeese" works for me and is the only soy cheese i have found so far that does not list cassein.
