Subject:         Are Soy Products Safe to eat?
Date: October 25, 2007 at 7:42 pm PST

I am lactose intolerant and have discovered many lactose free, dairy free alternatives made from Soy. These soy-based products have allowed me to get reunited with some great recipes and bring them back into my meal planning. Should I be concerned with using them and should I be limiting them in my repertoire. Is Soy safe!!! I am a professional chef and my use of soy-based products is for personal use to replace the lactose products in my life. From Soy milk daily in cereal, to soy creamers in soups and sauces, soy ice creams and soy cheeses for pizza, grilled soy cheese sandwiches, to making killer Alfredo sauce from unsweetened soy milk and soy grated topping, soy sour cream, and soy cream cheese, the list of alternatives is great. I eat nothing made from or with milk or dairy in it. I do not even by bread if its made with milk. How much is to much, seriously, for me its not about being a vegetarian, living the vegan life style, or animal rights its about enjoying great dishes again at home with great friends and not having to make two dishes, one for me and the other for you. Can I over do my soy intake and what would I notice happening to me if I did. I have been reading the posted notes on you site and I am now very concerned.
Thanks in advance,
In good taste,
