What do you mean by dried minced soya chunks? are these ground beans or like Yuba sticks(AKA bean curd sticks or Chinese dried bean curd skins- found in Asian markets).
If the later, I doubt it- not pressed tofu anyway. Yuba is already a form of tofu- in the sense that it is a form of bean curd, its just not pressed tofu like what you get in the grocery store. Yuba is actually the skin the is scrapped off the top of soy milk during the soymilk/pressed tofu making process (I will say though that I cook with Yuba a lot and love it, you can do all kinds of things with it- it has a very interesting texture. Find a vegetarian/vegan Chinese cookbook for ideas on how to use it. I recommend "Contemporary Chinese Cooking" by Bryanna Gorgan Clark. She is also another discussion board moderator here for the beginning veggies board. Her recipes are phenomenal!
If the former (ground beans), I suppose I would depend on what kind of processing was done to it but I don't see why not. Are you familiar with how to make tofu? Its really easy to do.
Also, have you tried looking at health food stores for the whole beans? You could also buy in bulk on-line but I would shop locally first to avoid shipping charges.
Last thought, usually, grocery stores are willing, if you ask, to do special orders for customers. You might check to see if you can get soy bean special ordered.
