Regarding "concerns about soy."
I find it so absurd that a food like soy can cause so much controversy, when the SAD diet is known to cause heart disease, cancer, type 2 diabetes, arthritis, osteoporosis, stomach difficulties, and dozens of other ailments.
Because soy is just a food, and one that has been consumed for centuries by other cultures. And when those cultures adopt the American style of eating, their rates of those same diseases drastically increases. But there is so little aggressive mainstream information about what should be the real concern -- the extreme overload of animal products in the standard American diet!
All I can tell you is I have consumed soy for over ten years and have no health issues, I'm over 40, almost 50, actually, look much younger (people are always shocked when they find out I'm over 40). My daughter has consumed soy since she was a year old and she's vibrantly healthy.
Soy adds a great deal of variation to a plant based diet, although you can eat very healthy without it, I can't imagine living without tofu and soymilk. I don't eat analogs much anymore, most of the soy I eat is in the form of tofu and soymilk, occasional tempeh and I do use miso a few times a week, miso is a wonderful food.
You may have heard that tofu is high in fat, it is true that it is around 50% fat but also true that it is very low in calories so the amount isn't that much. You can also get tofu in reduced fat, which is what you may want to do.
Another good alternative for "milk" is almond milk, I don't care for the Pacific brand but tried another brand, Almond Breeze and loved it, I order it by the case.
