Hi Marie, I just became the proud owner of your cookbook, The Enlightened Kitchen. I have read through most of it (all of the nutrition information, but not quite all the recipes yet) and while I love the information that you present, I have a question for you. You seem to rely on processed meat analogues ie: Gimme Lean, veggie Canadian Bacon, etc. It would seem that, though they contain no animal ingredients, the fact that they are still processed would make them not the best option. In addition, I have read that several of the ingredients in those type of items (hydrolized or autolyzed yeast, yeast extract, etc) are really MSG in disguise. What is your feeling on this? Again, I only ask because I was so impressed with the beginning of the book, and all of your information on osteoporosis, cancer, etc. So much so that I purchased a copy for my mom already. And I am truly interested in whether you have read the same thing abut the MSG and what your opinion is. Thank you in advance
