Why not tofu?

You can make reallydelicious soy ice cream using Japanese style
tofu--like Mori-Nu Lite Silken Tofu. Silken tofu is just like custard.

Other wise you would have to thicken the soymilk with agar flakes or
cornstarch. And tofu is nothing more that naturally thickened
soymilk.
