Soy is not necessary for a healthful plant based diet. Processed foods aren't that great for you anyway, so just eat a lot of natural unprocessed vegetables, beans, fruits, whole grains. Dairy is a good thing to eliminate from your diet for so many reasons I cannot begin to list them all. Instead of dairy have products made from rice or almond, Almond Breeze makes a yummy "milk" beverage, it's my favorite. Lots of people like rice milk OK. There is no cholesterol in plant foods so if you do not eat animal protein you will be eliminating that as well. Be sure you get B-12 from supplements or fortified foods such as Veg Support formula nutritional yeast, some non-dairy milks are fortified with B-12. Also make sure you take in vitamin D, in the winter months from a supplement, in the summer months from exposing your skin to sunlight for 20 minutes or so a day. A diet that includes all the above can be so satisfying and healthy, you will need to do some reading and get yourself some cookbooks to learn how to make delicious meals using vegetables, beans and grains. You might want to check out seitan as a meat substitute, it is made from wheat gluten. Some people cannot tolerate gluten, you will have to discover that for yourself. It's just the kind of thing you need to do lots of reading, buy yourself some books, McDougall has good information on healthy plant based diet, that's a good place to start.
