That's very true. We have to keep in mind that food is meant to be consumed in it's natural form. Dr. McDougall has meantioned in other articles that soy has been consumed by Asians for many centuries without doing them harm. It's important to note, also, that soy consumption among Asians is not as high as we might imagine; their diets contain lots of vegetables and grains - as well as tofu and soymilk. Soy is an addition; it's not the main dish.
I spent some time in Taiwan a number of years ago and was struck by the great variety and quantity of vegetable dishes - even in restaurants and homes were meat was offered. And of course the centerpiece was/is always rice. Even the phrase to "eat a meal" - "chih fun" really means "to eat rice". The character for rice refers to all food because it's understood that grain (in this case rice) is fundamental to human nutrition.
