Hi Marie (and everybody), I came across your spiced cranberry muffin recipe, which looks great ! I found it just on time as I'm experimenting lately with different vegan muffin recipes. I have two questions. First, what would you advise me to use as a substitute for the egg replacer powder (I prefer a non-commercial egg substitute)? I know about the different options (such as ground flax seed, bananas, tofu, etc.) but the results are not always satisfactory in terms of the baked good final texture. Also, every option works differently for every recipe and there's always the issue of the exact quantities of the substitute, which are also something you have to play with. My second question is about the dried cranberries. I guess it can be replaced with another dried fruit (such as figs or dates) but I wanted to know whether the recipe would work with fresh fruit (like plums, apples etc.) in place of the dried fruit option ? I guess it should be modified in a way to accommodate to the fresh fruit extra moisture. Thank you.
