I think it is great that you are trying out the Adzuki bean, Ryan. I thik that for any vegetarian who is craving, as you had mentioned, a sweet alternative to the soybean, mung bean, etc. that the Adzuki is a great option. One thing that I have found, which really is quite tasty, is to grind them up into a jalapeno jelly, and serve them witha thin wafer. It sounds a little experimental, perhaps, but i love it!
