Sorry, but dairy isn't going anywhere in my diet. I know the risks and I know, above all, that it's not natural for anyone past infancy to consume ANY sort of dairy, much less that of another species. However, I eliminated all flesh products 19 years ago (and have never fallen off the wagon) and don't eat many eggs. I was engaged to someone, a vegan, who publishes a health periodical that's more or less a medical journal for laymen, so I'm not in the least ignorant of what's up with food and in fact became a vegetarian because I could no longer digest meat (not for ethical reasons).
The fact of the matter is that there's NO substitute for artisanal cheese, and please don't tell me about soy substitutes; I tried to make do with them for years (and they mostly weren't vegan anyway)! And yes, I'm aware of Rice Dream, etc. and even recommend it to my mom who's both lactose intolerant and borderline diabetic (although cinnamon and care seem to have knocked this), but they're no substitute for the hand-made gelato that's available here.
I fully appreciate that your suggestion was meant to be helpful and was motivated by concern and I actually agree with you, but for the foreseeable future I'll continue to eat dairy. Fine restaurants here tend to be very accommodating to vegetarians, especially if notified in advance, but my options would be greatly diminished if I eliminated eggs and dairy. Soy cooking is, to me, another cuisine altogether--one that's no less valid than any other but not a substitute for them, either (with the possible exception of some of those yummy meat analogs that were under discussion).
I never drink, I haven't smoked in almost 19 years, I don't use drugs, and I don't even drink coffee. Allow me my few dietary vices--perfection can lead to moral smugness!
