I saw somewhere that there are soy noodles made from tofu, but I've never tried them. I make a Chinese-style cabbage dish which uses mung bean noodles, which are made from the starch of mung beans. They're very easy to use and are delicious, but I'm sure their nutritional content isn't as impressive as anything made from soy. Karen
