The TofuXpress looks very interesting. Thank you for the reference. Although If you are like me an do not like plastic very much, here is a wooden tofu mold (which comes with a packet of Nigari and cheese cloth). The tofu made with this kit is amazing (as some of the taste of the wood gets absorbed into the tofu- better than plasticy taste). I do have to warn you though, I would not leave tofu overnight in this mold as it can warp (this happened to me). Mine still works but it now looks a little weird. I am currently looking for a metal tofu mold.
