I've been a lacto-ovo vegeterian for 26 years and the last several years I've been leaning toward vegan. I avoid eggs and dairy though I haven't cut them out completely. I still enjoy a pint of my favorite ice cream (Braums Mint chocolate chip) on my birthday and when I'm at a celebration I have a slice of cake even though I know it has eggs and dairy in it). When I'm traveling I usually have eggs for breakfast on the road. I doubt I'll ever be 100% vegan though I do think the closer you are to this ideal the better for both your health and for the welfare of animals.
My wife still eats meat but has cut back a lot and usually eats grass fed organic beef, organic free range eggs, and organic raw milk when she indulges in animal products.
Dairy was actually pretty easy for me to give up. I used to eat a lot of cheese, butter and creamy sauces and I used to really enjoy and crave these foods. Once I quit eating them my cravings quickly went away. The smell of cheese use to make my mouth water but now most cheeses don't even smell good to me. Giving up dairy also greatly improved my health; overnight my seasonal allergies and asthma got a lot better. I see giving up dairy as a more significant dietary change than giving up meat, fowl, and fish 2 decades ago.
I think avoid dairy is really a good idea even if you aren't going to go 100% vegan.
