Subject:         what to serve with falafel

Mix and match as many of these as you like...


1. Salad (lettuce & tomato & olives)
(This also can go in the falafel pita sandwiches)

2. Hummus

1 can chickpeas, drained and mashed.
Season to taste with tahini (sesame butter),
olive oil (optional), minced garlic,
lemon juice, salt, and pepper.

3. Baba Ganoush

1 large eggplant, or 3 small eggplants
3 cloves garlic, peeled and finely minced
1 Tbs lemon juice
Salt and pepper
1/4 cup tahini (sesame paste)
1 Tbs olive oil (optional)

Bake eggplant at 350 F until soft.
Cut open, and scrape out pulp.
Put pulp into a bowl.
Add all other ingredients (adjust amounts to taste).
Chill.
Serve in pita bread with sliced tomato, sliced cucumber, shredded lettuce,
shredded onion, hot sauce, etc.


VARIATIONS:
Mix in 1/2 cup hummus.
Use more (or less) garlic, to taste.
Drizzle lightly with sesame oil.
