The Great White Cake
1 & 1/2 cups flour
3/4 cup sugar
2 tsp baking powder
1/4 tsp salt
3/4 cup soymilk or other non-dairy milk
2 tsps vanilla
1/4 cup melted dairy-free margarine, or oil
Ener-G Egg Replacer for 1 egg, prepared as per package directions*
Preheat oven to 350 F.
Grease a 9" x 9" cake pan.
In large bowl, mix together flour, sugar, baking powder, and salt.
Combine remaining ingredients, and add to flour mixture.
Beat by hand for 1 minute.
Bake for 30 minutes, or until a toothpick inserted in center of cake
comes out dry.
Makes one cake layer.
Multiply amounts as needed!
*If Ener-G is not available,
use 2 tsps tapioca flour, soy flour, or cornstarch, mixed with 2 Tbs water

Cupcakes
Put batter into greased cupcake pans.
Bake 20 minutes, or until a toothpick inserted in center of a cupcake
comes out dry.

VARIATIONS:
Yellow Cake
Add 3 - 5 drops yellow food coloring to batter.

Lemon Cake
Use 1 & 1/2 tsps lemon extract and 1/2 tsp vanilla.
Add 1 tsp grated lemon zest (yellow part of lemon peel).
Frost with lemon frosting or vanilla frosting.

Orange Cake
Use 1 & 1/2 tsps orange extract and 1/2 tsp vanilla.
Add 1 tsp grated orange zest (orange part of orange peel).
Frost with orange frosting or vanilla frosting.

Frosting
1/3 cup soy margarine, room temperature
1 - 2 tsp vanilla or almond extract (or other flavor)
Small pinch of salt
Soymilk
1 lb confectioner's (powdered) sugar (more, if needed)
In a large bowl, cream the margarine until fluffy.
Mix in the vanilla, salt, and a few drops of soymilk.
Add the sugar gradually, to desired consistency.
Beat until smooth.
Use immediately.
