Banana Blueberry Muffins
Chef Deb

1 & 1/2 cups white spelt flour
1/2 cup rolled quick oats
1/3 cup granular fructose or sugar
2 & 1/4 tsps baking powder
1/2 tsp cinnamon
1/2 tsp salt
1 tsp soy oil
1 tsp vanilla
1 cup pureed very ripe banana
1/2 cup blueberries
Apple juice

In a large bowl, mix dry ingredients.
In another bowl, mix oil, vanilla, and banana puree.
Mix banana-pear mixture into dry mixture.
Stir in apple juice until you get a thick, cake-batter-type mixture
(not too wet or too dry). Do not overmix.
Fold in blueberries.
Pour into well-sprayed muffin tins, filling 3/4 full.
Bake at 350 F until a toothpick inserted into center of a muffin
comes out dry (20 minutes or thereabouts).

Strawberry Peach Muffins

1 & 1/2 cups white spelt flour

1 tsp soy oil
1 tsp vanilla

1/2 cup pureed peaches
1/4 cup pureed strawberries
Apple juice

In a large bowl, mix dry ingredients.
In another bowl, mix oil, vanilla, and fruit purees.
Mix banana-pear mixture into dry mixture.
Stir in apple juice until you get a thick, cake-batter-type mixture
(not too wet or too dry). Do not overmix.
Pour into well-sprayed muffin tins, filling 3/4 full.
Bake at 350 F until a toothpick inserted into center of a muffin
comes out dry (20 minutes or thereabouts).

Pear Granola Muffins
Chef Deb

1 & 1/2 cups white spelt flour
1/2 cup rolled quick oats
1/3 cup granular fructose or sugar
2 & 1/4 tsps baking powder
1/2 tsp cinnamon
1/2 tsp salt
1 tsp soy oil
1 tsp vanilla
1/3 cup pureed very ripe banana
2/3 cup pureed pear
Apple juice

Topping:
Frosting (as needed)
Granola (as needed)

In a large bowl, mix dry ingredients.
In another bowl, mix oil, vanilla, and banana and pear purees.
Mix banana-pear mixture into dry mixture.
Stir in apple juice until you get a thick, cake-batter-type mixture
(not too wet or too dry). Do not overmix.
Pour into well-sprayed muffin tins, filling 3/4 full.
Bake at 350 F until a toothpick inserted into center of a muffin
comes out dry (20 minutes or thereabouts).
When muffins are cool, spread a small amount of frosting on tops.
Dip tops into granola.

Frosting

1 Tbs margarine, room temperature
1/4 tsp vanilla
Confectioner's (powdered) sugar, as needed

In a bowl, cream the margarine until fluffy.
Mix in the vanilla.
Add the sugar gradually, to desired consistency.
Beat until smooth.
Use immediately.

Fat-Free Banana Bread

2 cups flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1 cup mashed, very ripe bananas
1/2 cup applesauce
1/3 cup natural sugar
2 egg subs (Ener-G)
3/4 cup soymilk or rice milk
1 Tbs vinegar

Mix soymilk and vinegar. Let stand 10 minutes.
Sift together flour, baking powder, baking soda, and salt. Set aside.
In a bowl, mix sugar and applesauce.
Add egg subs, and beat well.
Add bananas, and beat again.
Add small amounts of flour mixture alternately with the soymilk, beating well after each addition.
Put mixture into a greased, 9" x 11" pan.
Bake at 350 F for 25 minutes, or until a knife inserted in center comes out clean.
Note from Shannon:
Add some cinnamon and vanilla as desired, I think I used 1 tsp.

Blueberry Muffins

2 cups flour
1 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1/4 cup margarine
1 cup sugar
2 egg subs (Ener-G), prepared
1 cup blueberries
3/4 cup soymilk
1 Tbs vinegar
1/4 cup finely chopped nuts (optional)
1 tsp vanilla
Mix soymilk and vinegar. Let stand 10 minutes.
Sift together flour, baking powder, baking soda, and salt. Set aside.
Cream margarine until fluffy.
Gradually beat in sugar.
Add egg subs and beat well.
Add vanilla.
Alternately add small amounts of flour mixture and the soymilk. Beat well after
each addition.
Add blueberries, and mix gently.
Add nuts (if used), and mix gently.
Put into greased muffin pans.
Bake at 350 F for 20 minutes, or until a knife comes out clean.

Chocolate Chip Muffins
Omit nuts.
Substitute chocolate chips for blueberries.
----
Double Chocolate Muffins
Omit nuts.
Add 1/4 cup cocoa powder to dry ingredients.

Oatmeal Chocolate Chip: use 1/2 cup oatmeal in place of a 1/2 cup of the flour
