Lemon Cake (or Muffins)
Cake:
2 & 3/4 cups sugar
1 cup vegetable oil (can use half applesauce)
Ener-G Egg Replacer for 3 eggs, prepared
1 tsp lemon extract
1 tsp vanilla extract
3 cups unbleached flour
2 tsp baking powder
1/2 tsp salt
1 & 1/2 cups soymilk
Glaze:
1 cup powdered sugar
2 Tbs lemon juice
Preheat oven to 350 F.
Grease and flour a 12-cup bundt pan, or other baking pan of similar capacity.
In a large bowl, beat together sugar, oil, egg subs, and extracts.
In another bowl, mix together flour, baking powder, and salt.
Beginning and ending with the dry ingredients, add them to the first mixture alternately with the 'milk.
Pour batter into prepared pan.
Bake 45 - 50 minutes, or until a toothpick inserted in center comes out clean.
Remove cake from oven, and cool 10 minutes.
Invert on wire rack, and remove from pan.
While the cake is cooling, mix together lemon juice and powdered sugar.
Drizzle the glaze over the cake while cake is still slightly warm.
Cool completely before slicing.
Can also be made as muffins. Bake 20 - 25 minutes, or until tests done.
