Subject: Spice Cake

Spice Cake
1 & 1/2 cups flour
3/4 cup sugar
2 tsp baking powder
1 tsp cinnamon
1 tsp ginger
1/2 tsp nutmeg
Pinch of cloves
1/4 tsp salt
3/4 cup soymilk
2 tsp vanilla
1/4 cup melted margarine or oil
Ener-G Egg Substitute for 1 egg*
Preheat oven to 350 F.
Grease a cake pan.
In a large bowl, mix together flour, sugar, baking powder, spices, and salt.
Combine remaining ingredients, and add to flour mixture.
Beat for 2 minutes.
Bake for 30 minutes, or until a toothpick inserted in center of cake comes out dry.
Makes one cake.
*Or: 2 tsp tapioca flour mixed with 2 Tbs water.

Frosting
1 lb natural sugar
1/4 tsp salt
1/3 cup soy margarine, room temperature
1/4 cup soy milk
1 - 2 tsp vanilla or almond extract
Put sugar, 1/4 cup at a time, in coffee mill or mini-processor.
Grind to a fine powder. Set aside.
In a large bowl, cream the margarine until fluffy.
Mix in the "powdered" sugar and salt.
Add the soy milk.
Beat until smooth, adding more soy milk if needed.
Use immediately.

Brown Sugar Frosting
2 cups brown sugar
2/3 cup soymilk
2 Tbs corn syrup
4 Tbs margarine
Few grains salt
1/2 tsp vanilla
Combine all ingredients together except vanilla in a large saucepan.
Bring to boil over medium heat, stirring constantly, until sugar is dissolved.
Boil without stirring until mixture reaches the soft ball stage (238 F) (use candy thermometer).
Cool to lukewarm.
Add vanilla, and beat vigorously until creamy and stiff enough to spread.
Use immediately.
