Yule Log Cake

Ener-G Egg Substitute for 3 eggs, prepared
1 tsp oil
1 cup sugar
1 tsp vanilla
1/3 cup water
1 cup flour
1 tsp baking powder
1/4 tsp salt
1/4 cup cocoa

Preheat oven to 375 F.
Beat egg substitute and oil until frothy.
Add sugar gradually, and beat until well-mixed.
Beat in vanilla and water.
Sift together flour, baking powder, salt, and cocoa.
Fold dry ingredients into the egg sub mixture.
Spray or grease a jelly roll pan.
Line pan with wax paper, and grease the wax paper.
Pour cake mixture into pan.
Bake 10 - 12 minutes, or until cake pulls away from pan edges.
While cake is hot, invert cake onto a clean piece of wax paper sprinkled with powdered sugar.
Roll cake up from the short end.
Allow cake to cool.

Filling / Icing:
1 package Duncan Hines Cream Cheese Frosting (non-dairy)
1 Tbs cocoa

Beat frosting and cocoa together until well-blended.

Assembly:
Unroll cake.
Spread filling evenly throughout, leaving 1/4" space not frosted on all edges.
Roll cake up, from the short end.
Cut a 1-inch diagonal piece off each end of cake, in the same direction.
Use these pieces for "knots" on the log.
Place one or both of the knots on top of the log.
Frost the log.
Chill in freezer until frosting is cold.
Using the tines of a fork, score "bark" along the sides and top of the log.
Dust with powdered sugar, as "snow".
Garnish with a few berries, leaves, or candy "mushrooms".
