I think whole wheat pastry flour is from a different kind of wheat, soft white wheat, whereas regular whole wheat flour is from maybe red wheat? Someone correct me here. Also, whole wheat pastry flour is ground finer than whole wheat flour. The pastry flour is good for cakes, pastries, muffins, etc. I think the regular whole wheat flour has more gluten in it and is better for bread, pizza crusts, etc.
