Tofu Omelettes
1 box (10 & 1/2 oz) firm silken Tofu
3 Tbs unbleached flour
4 tsp Ener-G Egg Replacer
3/4 cup water
Salt and pepper
Dash of turmeric
Indian black salt (if available)
2 tsp vegetable oil
1/4 cup diced onion
3 Tbs chopped bell pepper
1 stalk celery, finely chopped
1/4 cup thinly-sliced mushrooms
In blender or processor, put Tofu, flour, Egg Replacer, water, and spices.
Process until smooth. Mixture should be like pancake batter.
If too thick, add a little more water. Set aside.
In a large frying pan, heat 1 tsp oil over medium heat.
Add onion, bell pepper, celery, and mushrooms.
Stir-fry until crisp-tender.
In a large bowl, gently mix together vegetable mixture and Tofu mixture.
Heat remaining oil in a frying pan over medium heat.
Drop mixture by 1/3 cupfuls into pan, forming rounds.
Cover, and fry until golden brown on bottom.
Flip over, cover, and fry until golden brown on other side.
Serve immediately.
