Banana Pecan Scones
1 & 1/2 cups unbleached white flour
1/2 cup whole wheat pastry flour
1/4 cup dry maple granules or dry date sugar
1/8 tsp cinnamon
2 tsps baking powder
1/8 tsp salt
1/3 cup oil
1/4 cup mashed banana
1/4 cup raisins
1/4 cup chopped pecans
1/2 cup soymilk
1 egg sub (Ener-G), prepared and beaten
1 tsp vanilla
1 egg sub (Ener-G) + 1 Tbs soymilk (mix together)
In a large bowl, combine flours, maple granules, cinnamon, baking powder, and
salt.
Blend oil into the flour mixture with a pastry blender, until mixture looks like
coarse crumbs.
Mix in banana, raisins, and pecans.
In a small bowl, combine 1/2 cup soymilk, 1 egg sub, and vanilla.
Add this to the flour mixture, and stir until just combined. Do not overmix.
Knead dough gently on a lightly-floured surface.
Roll or pat the dough into a circle about 7" diameter and about 1 & 1/2" thick.
Cut this circle into 8 triangular sections.
Or, cut the dough into rounds with a cookie cutter.
Put the scones on a lightly-greased baking pan.
In a small bowl, mix 1 egg sub with 1 Tbs soymilk.
Brush the scones with this mixture.
Bake at 350 F for 15 minutes, or until lightly browned.

Banana Oat Cookies
1/2 cup mashed banana
2 Tbs vegetable oil
1 cup date sugar granules
1/2 tsp salt
2 cups rolled oats (quick oats)
1 tsp baking powder (optional)
1/3 cup sunflower seeds
1/3 cup rasins
In a large bowl, put banana and oil. Mix well.
Mix in date sugar and salt.
Mix in oats, baking powder, sunflower seeds, and raisins.
Roll mixture into balls.
Put into a greased baking pan.
Press down lightly with a greased and sugared glass.
Bake at 350 F until lightly brown, about 8 - 12 minutes.
Watch carefully... Don't let them burn.

Fruit Cookies
3 cups flour
1 Tbs baking powder
1/4 tsp salt
1/4 cup almond meal (finely ground almonds)
1 cup pitted (pitless) dates or raisins (or half of each)
1/3 cup warm water
Ener-G for 2 eggs, prepared
1/3 cup all-fruit preserves, peach or apricot
1/4 cup margarine, melted
2 tsps vanilla
Preheat oven to 350 F.
Sift flour, baking powder, and salt into a large bowl.
Mix in almond meal.
Put dates and/or raisins and water into processor or blender.
Process to a puree.
Add Ener-G, and blend together until smooth.
Put date/raisin mixture into a medium bowl.
Mix in preserves, melted margarine, and vanilla,
Fold fruit mixture into flour mixture, stirring only until blended.
Drop spoonfuls of dough onto a cookie sheet, and press down lightly.
Bake for 8 - 10 minutes, until lightly browned.
Approx 3 dozen cookies.
VARIATIONS:
Use different types of nuts.
Use different types of preserves.
Use different types of extract.
Use quick oat flakes for half the flour.
