These cheeze recipes can be made soy free by using rice milk instead of soymilk. I am not sure what they'd be like without the nutritional yeast though, as this gives vegan cheese recipes their "cheesy" flavour. I am not sure if this can be substituted. You'll have to wait for Deb (or somebody else) to answer that! If it can't be substituted, I'd try leaving it out altogether.

Cashew Cheezes for Pizza

Cashew Cheeze
2 cups soymilk or rice milk
1 cup chopped cashews
1 Tbs cashew butter, tahini, or almond butter
1/2 cup nutritional yeast
1 tsp onion powder
1/2 tsp garlic powder
1/2 tsp salt
1 Tbs lemon juice
In blender or processor, put cashews.
Blend to powder.
Add remaining ingredients.
Blend thoroughly.
Put into a saucepan, and bring to boil.
Boil, stirring constantly, until thickened.
Cool slightly.
Use to top pizza, or use as desired.
Cashew Slicing Cheeze
1 cup water
1/4 cup agar flakes
1 cup chopped cashews
1/2 cup chopped red bell pepper
1/3 cup nutritional yeast
1/2 tsp garlic powder
1/2 tsp salt
1 tsp onion flakes
1 Tbs tahini
2 Tbs lemon juice
1/2 tsp paprika
Put water and agar in a pan, and let soak 5 minutes.
Bring to boil.
Reduce heat, and simmer, stirring often, for 5 minutes, or until agar
is completely dissolved.
Put water-agar mixture into blender or food processor, and let cool slightly.
Add cashews, and blend on high until smooth and creamy.
Stop blender and scrape sides as needed.
Add remaining ingredients, and blend until smooth and well-mixed,
scraping sides as needed.
Pour mixture into a container, and refrigerate until set.
Cheeze can be sliced or grated.
And an easier way to make the cheeze....
Mix all ingerdients for cheeze in a deep, wide bowl. Proceed as directed with agar agar and water and after the 5 minutes are up, pour into cheeze mix and fold the agar mixture in with a rubber spatula. Pack into container and refrigerate.
