Subject: Gramma's lime jello mold

My Gramma used to make this jello mold and I loved it as a kid too. She used to put red marischino cherries in the bottom of the mold and hers had grated carrots in it too. It was wonderful! As I remember how Gramma used to make it, she used a round mold and the following steps.

you make the lime jello according to package directions
let it chill till half set in the fridge
take it out of the fridge stir in the whipped topping and the pineapple (Gramma used crushed/well drained) and some grated carrots (just enough for color), stir it just enough to blend, not too much that it turns watery
push down the cherries to the bottom of the mold spaced about 2" apart
spoon in teaspoonfulls of the cream cheese into the mold and put back into the fridge to set the rest of the way.

It may look gross, but it really is a wonderful, creamy and yummy dessert. I'm making one for our Thankgiving for the first time with the vegan substitutes, so I don't even know if it's going to turn out, but I'll try to make Gramma proud!
