Curry Powder

2 & 1/4 cups coriander seeds
1/2 cup fenugreek seeds
1/2 cup cumin seeds
3 & 1/2 tsp black peppercorns
1/2 cup dried whole red chiles
1 7" cinnamon stick, broken into pieces
10 whole cardamom pods
10 whole cloves
5 tsp turmeric powder

In a dry pan, gently stir-toast, one at a time, the coriander, fenugreek, cumin,
peppercorns, and whole chiles.
Fry the chiles until they are dark brown and crispy.
Cool, and break the chiles into pieces.
Put the chiles, along with the seeds, in a spice mill or coffee grinder,
and process to a fine powder.
Repeat with the cinnamon, cardamom, and cloves.
Add the turmeric powder, and mix well.
Cool completely.
Store in an airtight container.

Fancy Curry Powder

2 & 1/2 tsp fenugreek seeds
1 tsp (about 20 pods) cardamom seeds (cracked to release seeds)
3 Tbs coriander seeds
1 Tbs cumin seeds
1 Tbs mustard seeds
6 whole cloves
1 3" cinnamon stick, broken into pieces
1/4 tsp ground mace
1/4 tsp grated nutmeg
1 big pinch cayenne
2 Tbs ground turmeric
Dried toasted hot pepper (to taste)

Preheat oven to 225 F.
In a small pan, combine fenugreek, cardamom, coriander, cumin and mustard seeds,
cloves, and broken cinnamon stick.
Bake for 15 minutes, shaking the pan a few times.
Let cool.
In a bowl, combine the toasted spices with the mace, nutmeg, cayenne, tumeric,
and peppers.
Put in a spice mill, and grind to a powder.
Cool completely.
Store in an airtight container.

Makes about 1/2 cup.

Garam Masala

5 cinnamon sticks
1 cup cardamom pods
1/2 cup cumin seeds
1/2 cup coriander seeds
1/2 cup black pepper
1/2 cup cloves

Dry the ingredients separately in oven at 250 F.
Do not let them turn brown.
Remove the seeds from the cardamom pods.
Pound cinnamon sticks into small bits.
Put all ingredients in blender or food mill, and blend at high speed
for 2 or 3 minutes, until they are well mixed and completely pulverized.
Store in an airtight container.
