Oatcakes

2 cup rolled oats
1/4 cup brown rice flour
1/2 tsp baking powder
1 tsp salt
1 Tbs oil
1 Tbs rice syrup or honey
1 Tbs apple sauce
1/4 cup finely minced dried fruit
1/3 cup apple juice or water

Preheat oven to 350 F.
In a food processor, process oats 'til they resemble a coarse flour.
Transfer to a bowl.
Add baking powder and salt, and mix well.
Add oil, syrup or honey, and apple sauce, and combine with a wooden spoon,
breaking up any lumps.
Add the juice or water, a little at a time, until the dough is combined.
Scatter the rice flour on the work surface.
Gather the dough into a ball, and roll it in the rice flour.
Roll out the dough to 1/4" thickness.
Using a cookie cutter, cut the dough into 2 & 1/2" rounds.
Using a spatula, transfer oatcakes to a baking sheet and bake for 15 minutes.
Let cool for 15 minutes.
Store in an airtight container.
