I tried roasting one, cut up, along with carrots and potatoes. It came out sort of soft but not all the way, like a mushy water chestnut -- hard to describe, but I didn't like it at all (baked at 400 for 45 min). I still have five left and don't want to waste them. Does anyone have another way to cook them, or can someone tell me what I did wrong? I can't seem to find any recipes in my cookbooks. TIA,
