Malai Kofta

1 yellow squash
1 zucchini squash
1 small onion
2 cups chickpea flour, sifted...more to make a thick batter
1 tablespoon ground coriander
cayenne to taste
salt to taste
1/2 teaspoon baking powder
ener-g for 1 egg

Preheat your oven to around 350F. Grease a cookie sheet. Mix the above ingredients together in a bowl. Drop by the spoonfool onto the cookie sheet and bake until set and light brown on the bottom. These are the kofta "dumplings."

gravy

5 medium Roma tomatoes, peeled
some jalapeno chili, deseeded to taste
1.5 inch piece fresh ginger, grated
2 cups plain soymilk (works best with regular fat soymilk)
4 tbl oil
2 teaspoons ground cumin
3/4 teaspoon turmeric
2 teaspoons garam masala
2 teaspoons paprika.

puree tomatoes, chili, ginger and soymilk in a blender.

heat the oil in a large saucepan. mix the ground cumin with turmeric, garam masala and paprika.

add the above spices all at once to hot oil and stir for one minute. add the tomato puree to spices. add 1 more cup of soymilk to spices and the puree. boil. reduce heat, simmer for ten minutes. add half of the cooked kofta balls. simmer another ten minutes to soften them. serve with rice or greens.
