Sorry this took so long --
I've been having computer problems!

I hope this recipe solves your cake needs. :)

The Great White Cake

1 & 1/2 cups flour
3/4 cup sugar
2 tsps baking powder
1/4 tsp salt
3/4 cup almond milk, soymilk, rice milk
[or other 'milk]
2 tsps vanilla
1/4 cup melted margarine or oil
Ener-G Egg Replacer for 1 egg, prepared as per package directions*

Preheat oven to 350 F.
Grease a 9" x 9" cake pan.
In large bowl, mix together flour, sugar, baking powder, and salt.
Combine remaining ingredients, and add to flour mixture.
Beat by hand for 1 minute.
Bake for 30 minutes, or until a toothpick inserted in center of cake
comes out dry.

Makes one cake layer.

Multiply amounts as needed!


*If Ener-G is not available,
use flax-goop,
or 2 tsps tapioca flour, soy flour, or cornstarch, mixed with 2 Tbs water

Cupcakes

Put batter into greased cupcake pans.
Bake 20 minutes, or until a toothpick
inserted in center of a cupcake
comes out dry.

VARIATIONS:

Yellow Cake

Add 3 - 5 drops yellow food coloring to batter.

Lemon Cake

Use 1 & 1/2 tsps lemon extract and 1/2 tsp vanilla.
Add 1 tsp grated lemon zest (yellow part of lemon peel).

Frost with lemon frosting or vanilla frosting.

Orange Cake

Use 1 & 1/2 tsps orange extract and 1/2 tsp vanilla.
Add 1 tsp grated orange zest (orange part of orange peel).

Frost with orange frosting or vanilla frosting.

Chocolate Cake

To dry ingredients, add 1/3 cup + 1 Tbs cocoa powder (sift before adding).

Frost with chocolate frosting.

Mocha Cake

To dry ingredients, add 1/3 cup cocoa powder
and 1 Tbs instant coffee powder (sift both before adding).

Frost with vanilla frosting or chocolate frosting.
