Subject:         Easter Brunch

Easter Brunch Casserole

No-stick spray (Pam, etc)
4 slices bread, crumbled
2 cups veggie sausage crumbles (thawed)
1 box firm silken or waterpacked Tofu, drained & crumbled
1 & 1/2 cups almond milk or rice milk
1/2 tsp dried rosemary
1/4 tsp dried sage
1/8 tsp paprika
Salt to taste
Pepper to taste
1 cup grated vegan cheeze

Spray 9" x13" baking pan with no-stick spray.
Spread crumbled bread in pan.
Sprinkle veggie sausage over bread.
In a bowl, mix tofu, 'milk, and seasonings.
Pour over bread and sausage.
Top with grated cheeze.
Bake in preheated 400 F oven for 30 minutes
or until hot throughout.


VARIATION:
Substitute cooked white beans for the tofu.
Mash the beans slightly before adding.
