Subject:         Cream of Celery

Cream of Celery Soup Concentrate
(use as a substitute for same)

2 cups soymilk, rice milk, or almond milk
2 Tbs cornstarch
4 tsps vegetable bouillon powder (or 4 cubes)
1/4 tsp celery seed
1 cup chopped celery
1/2 tsp sugar or other sweetener (opt)

Put all ingredients in a saucepan.
Cook over medium heat, stirring constantly, until mixture begins to thicken.
Continue cooking, stirring constantly, until mixture is very thick.

Use in casseroles, or thin with more 'milk to make soup or gravy.
