If you keep a few boxes of silken tofu in the pantry,
you can have this at a moment's notice.

Yogurt Substitute

1/4 cup silken (boxed) tofu, soft or other
2 Tbs nondairy milk
4 drops apple cider vinegar, or lemon juice

Blend in blender (or use stick blender) until smooth.

Makes about 1/4 cup.

Use within 1 day.
