Subject:         TOFU TURKEY

I HAVE A RECIPE FOR TOFU TURKEY, WHICH SOUNDS WONDERFUL, BUT IT CALLS FOR 2-1/2 CUPS OF SLICED MUSHROOMS.
MUSHROOMS ARE NOT A FAVORITE OF MINE...........

MIGHT YOU SUGGEST SOMETHING ELSE, IN PLACE OF THE MUSHROOMS.

IT IS PRETTY MUCH, ONION, CELERY SWEET PEPPER, GARLIC SAUTEED WITH THE MUSHROOMS. THEN ADDING ALL THE FLAVORING, AND WHOLE WHEAT BREAD, WITH NUTS SUNFLOWER SEEDS AND CURRANTS.
AFTER ALL OF THIS IS PUT TOGETHER, IT GETS PUT INTO LOAF PAN, LAYERING 1/3 EACH TIME, OF MIXTURE AND THEN,THINLY SLICED TOFU AND SHARP CHEDDAR CHEESE.

WASN'T SURE IF THE RECIPE INGREDIENTS, WOULD GIVE YOU AN IDEA OF WHAT , THE MUSHROOMS COULD BE REPLACED WITH.
