I love making these with some roasted oven potatoes
or roasted Brussels sprouts (or your fave).

Something I make a lot is fajitas and tacos. Veggie
fajitas, you can make your own seasoning or just buy
it in the pack, same with the tacos but use some
Boca crumbles.

A lot of veggie pasta sauces are vegan, check the
labels and make sure. Spaghetti and sauce for a
quick meal. Or make your own sauce.

Baked potatoes with vegetarian chili (check the
label or of course you could make your own) with
vegan sour cream and vegan cheese.
